薑葱炒(蝦)蟹 - 蝦係送嘅, stir fried crab with ginger and scallion

1. Get a large mud crab, have the fishmonger clean and chop it (so youdon't have to wash it after, bcos you will lose the roe if you wash itafter being chopped up), make sure he takes out the lungs and thestomach.

2. Prepare plenty of ginger and scallion (plenty as inlike 20 stalks of scallion), slice ginger, cut scallion into 2 inchparts. separate the whites from the greens.

3. Add chilli and garlic if you want some kick in your dish

4. heatwok till smoking, add oil, throw in ginger, and scallion whites (andgarlic and chilli if you want), stir fry till flavour has been fullyreleased.

5. Sprinkle corn starch over drained crab and mixslightly, dunk into wok, stir fry gently for about 6 minutes or untilmost color has changed.

6. Add oyster sauce, soy sauce, sugar and a little chicken powder, and some water, enough for a sauce.

7. Bring to boil and cover for another 2 minutes

8. Throw in the remaining scallion, toss, add corn starch solution to thicken sauce to just coat all crab pieces. Serve HOT
